It´s February in the Genal valley, which means an opportunity to hunt for the tasty wild asparagus that grows here each year. It’s simple- grab a thick pair of gardening gloves and some scissors, and head out into the mountains with a hefty dose of optimism and a keen eye. You’re looking for a thick, prickly bush- similar to gorse, but without the yellow flowers. It’s quite painful to attempt to pick asparagus without being well prepared, but the flavour is well worth the cuts, believe me!
I recommend this annual delicacy with local fresh eggs, crusty bread and Andalusian pisto…¡Delicioso!
